You Will Need...
4 boneless, skinless chicken breasts
1 cup orange juice
1 tsp. lite soy sauce
4 tbsp. reduced sugar orange marmalade
In
a glass baking dish, pour both the orange juice and
soy sauce and stir. Add the chicken breasts and
marinade for 30 minutes in the refrigerator. Remove
the chicken breasts from the refrigerator and turn
over, and marinade 30 minutes more.
Preheat
oven to 350 degrees. Cover baking dish with
aluminum foil and bake for 60 minutes. Upon the first
half hour of baking, remove chicken from oven, and
turn over. Return the chicken with foil cover to the
oven for remaining time. 15 minutes prior to being
done, remove the baking dish again, and put 1 tbsp. of
orange marmalade over each chicken breast, and put
back in the oven to carmelize for the remaining baking
time.
Additional
notes: Serve with a garden salad, lite
salad dressing, brown rice, and steamed vegetables.
