Chances are, fries (or chips if you're in the UK) are one of your food staples that you've cut out from eating. So is there a healthy version? Of course! Nutritional Analysis per Serving: Calories: 138 Total fat 1g - Saturated fat 0g - Protein 6g - Cholesterol 0mg - Carbohydrates 29g - Sodium 313mg - Dietary Fiber 3mg Calories from Fat: 3% - Ingredients - 3 large baking potatoes, about 1.5 lbs (750g), peeled 4 cups (32 fl oz/11) water 1 tablespoon white wine vinegar 2 egg whites 1 teaspoon of paprika 1/2 teaspoon salt - Instructions - Slice potatoes lengthwise into matchsticks, about 1/4 inch (6 mm) thick. In a large bowl, combine the water, vinegar and potatoes. Set aside, uncovered, for 15 minutes at room temperature. - In a small bowl, using an electric mixer on high speed, beat the egg whites until foamy. - Preheat an oven to 400 F (200 C). Coat a large baking sheet with non stick cooking spray. - Place the potatoes on the prepared baking sheet in a single layer. Brush the tops and sides with the beaten egg whites and sprinkle with paprika and salt. Bake turning several time, until golden brown and crisp, about 40 minutes. - To serve, divide among 4 individual plates. |
