Baked French Fries

There's nothing worst than having to give up your favorite food when dieting or eating for a healthier way of life. Chances are, fries (or chips if you're in the UK) are one of your food staples that you've cut out from eating. So is there a healthy version? Of course!

- Ingredients -
3 large baking potatoes, about 1.5 lbs (750g), peeled
4 cups (32 fl oz/11) water
1 tablespoon white wine vinegar
2 egg whites
1 teaspoon of paprika
1/2 teaspoon salt


- Instructions -


Slice potatoes lengthwise into matchsticks, about 1/4 inch (6 mm) thick. In a large bowl, combine the water, vinegar and potatoes. Set aside, uncovered, for 15 minutes at room temperature.

In a small bowl, using an electric mixer on high speed, beat the egg whites until foamy.

Preheat an oven to 400 F (200 C). Coat a large baking sheet with non stick cooking spray.

Place the potatoes on the prepared baking sheet in a single layer. Brush the tops and sides with the beaten egg whites and sprinkle with paprika and salt. Bake turning several time, until golden brown and crisp, about 40 minutes.

To serve, divide among 4 individual plates.
